Old vines and 100% barrel ageing make this the perfect example of rich and age-worthy Chenin.
Older vines here, averaging 70 years in age from around the village of La Chatre-sur-la-Loir, the soils are rich in silex. Barrel fermented then aged 50% in foudre and 50% in smaller format oak. Barrels vary in age from 2 to 6 years old.
The ripe apple note here would be perfect with a rich crab dish. A generous pork chop with a creamy mustard sauce would also make the heart sing.
